Sanga aims to be the best

Albany's Hybla Bar and Grill is trying its luck in the Australian Hotels Association's prestigious search for WA's best steak sandwich.

The Middleton Beach establishment is the only one in the Great Southern region to enter this year.

Hybla manager Alex Johnson said the cut of Village Green Beef on its entry was the "hero" of the dish, sourced from Hybla owner Professor Roger Dawkin's family's farm near Pinjarra.

The sandwich also features locally sourced produce such as Bathgate Farm's heirloom tomatoes, greens from Shapland's Farm and Swiss cheese, Spanish onions, a house-made barbecue sauce and aioli to finish.

"All of our product has provenance and as we all know, provenance is king," Mr Johnson said.

Five regional and five metropolitan finalists with the highest number of votes will go head-to-head in a live cook-off in May.
