Third time’s a charm as Japanese fusion diner and nightclub Zypher Lounge takes over city jazz haunt

A new Japanese “fusion lounge” starring a former Nobu chef will take over the city laneway bar which previously hosted Prohibition-style jazz venues, Laneway Lounge and The Volstead Lounge.

New owners Elise Fotheringhame and Cathie Horvat will hope third time’s a charm when they launch Zypher Lounge on Saturday.

Located down an alleyway off Murray Street in the CBD, the venue will operate as a modern Japanese izakaya from Wednesday to Saturday before turning into a nightclub from 9pm on Friday and Saturday nights.

The ambitious addition to the city’s west end promises to be a “one-stop shop concept designed to seamlessly transition guests from an exceptional dining experience to late-night revelry, all under one roof”.

Korean-born chef Evan Bang, who mastered the art of Japanese cuisine at Nobu Perth for seven years before opening Northbridge restaurant Kukan Izaka, will combine traditional Japanese flavours with modern flourishes — including his signature fire shows.

His menu will feature sashimi platters, kushiyaki skewers, Wagyu carpaccio pizzas, pork belly, premium Wagyu striploin and crispy tempura, plus gelato for dessert.

The drinks list focuses on Japanese beverages, ranging from whiskies, premium spirits and sake alongside wines.

Zypher Lounge will also have an eye-catching cocktail list inspired by Tokyo nightlife, featuring a Yuzu Cello Spritz, Sake Bomb and the Zypher Martini.

The owners say evenings will begin with live entertainment and a sophisticated dining atmosphere before DJs take over from 9pm on Friday and Saturday nights.

Ms Fotheringhame, whose parents once owned long defunct Northbridge eateries The Good, the Bad and the Ugly (now Henry Summer) and Trains, Planes and Automobiles (now The Mustang Bar), said Zypher Lounge will offer a dynamic experience.

“We wanted to bring something truly unique to Perth,” she said. “When we look at other cities we see venues that offer everything in one place — great food, amazing drinks and a vibe that keeps you coming back.”

Ms Fotheringhame’s friend and co-owner Ms Horvat added that the new venue aims to create a space where patrons can “start their night with exceptional dining and end it with an unforgettable party”.

Located at 414 Murray Street, Zypher Lounge will be open on Wednesday and Thursday from 5pm to midnight, and from 3pm to midnight every Friday and Saturday.
