Bacco restaurant review: Shenton Park sees old-school suburban favourite become a modern Italian trattoria

Did they release white smoke in Shenton Park when Vincenzo Soresi sold Italian institution Galileo Buona Cucina to new owners, leading to the reopening of the western suburbs favourite late last year as modern Italian trattoria, Bacco? The end of Galileo, the very old-school joint favouring Sicilian-style staples, was the beginning of a new era. Judging by the crowd packing into 199 Onslow Road on a Wednesday evening, Italian food lovers are as much fans of the new pope as the old. It helps that the current pontiff continues Soresi’s devotion to woodfired dishes. Alessandro Stoccuto, who works the floor with Stanley Tucci-esque charm and knowledge, co-owns Bacco with Kate Coleman. The American-born wine importer spent plenty of time in Piedmont, Italy before moving to Perth in 2017 with her husband, former Socceroos player Stan Lazaridis. Stoccuto’s wife Sara D’Urzo was a pastry chef at Galileo for years, while inaugural head chef Paolo D’esposito, who has since moved on, also worked with Soresi. This sounds more like a succession than a revolution. Italo-disco blared through the restaurant as we were shown to our table for two in the middle of a chequerboard floor. Wine bottles decorated walls, while the woodfired oven in the kitchen roared away. Molto Italiano. Bacco is named after Bacchus, the Roman god of wine, so it is no surprise that the wine list is more expansive than the food menu. There are plenty of unusual options from Italy by the glass and bottle, as well as some local drops. Wednesdays are BYO, which perhaps explains the busy room. The menu is relatively concise and easy to navigate: four appetisers and half a dozen antipasto, four pastas and a quartet of mains, sides and another foursome of desserts. I began with a crostino ($10 each), which featured a filleted and charred sardine luxuriating on a bed of whipped ricotta and gremolata. Salty, creamy, smoky … an excellent start. The crumbed veal meatballs, or polpette ($18 for four) sat on salsa tonnata riddled with crispy capers. The veal and tuna sauce were lovely and light, a very subtle dish that also impressed. The charred Abrolhos octopus, or polipo ($24) was scorched, perhaps overdone. But the blackened occy worked well with the accompanying blend of potatoes, shallots, black olives and basil. We needed a serve of bread to mop up this bold mix and the tonnata. In seconds, the waiter whisked us a serve which came with moretum — the herb-laden spread commonly eaten in ancient Rome. Gladiator butter. For mains, we shared the rigatoni with a spicy Calabrese nduja arrabbiata sauce, pecorino cheese and basil ($32). The serve was generous, and so was the waiter, who grated a Mt Etna of pecorino onto the tube pasta, which was almost too al dente. A simple dish with abundant flavour. The waiter confessed to have never used this type of cheese grater — a gadget where you pop formaggi in a metal cylinder, which is turned with a handle and, hey, presto! A lot of people have one at home. This gap in knowledge did not impact on her service. A dropped spoon didn’t bounce a second time before a new one was on the table. The fish of the day was a wood-fired rankin cod paired with charred leeks and a limoncello beurre blanc ($48). The cod was well-charred and the leeks a lovely authentic touch to a brilliant dish elevated by the beautifully balanced butter sauce. This beurre blanc is up there with the ridiculously amazing one accompanying the swordfish at Gibney. We also had a salad of green leaves, including very bitter radicchio, blood orange and zesty raspberry dressing ($16) to complete an impressive dinner. Wait a minute! Dessert. We had to try the tiramisu, listed on the menu as Baccomisu ($18). If a restaurant puts their name on a dish, you’ve got to try it, even just to call them out for being ostentatious. Bacco’s version was light, perhaps closer to a zabaione custard than the usual intoxicatingly delicious coffee-biscuit-and-booze explosion of a traditional tiramisu. No dramas. The booze part of that equation came via a shot of grappa, specifically an excellent barrel-aged tipple from Piedmont. For an inner-suburban Italian restaurant on a weekday, Bacco impressed. There are some far more renowned establishments that could look and learn from this molto bene bistro in Shenton Park. Galileo is dead, long live Bacco.
